Roasted Vegetables with Sea Salt and Lemon
Ingredients (4 people)
- 2 courgettes
- 2 carrots
- 1 red pepper
- 1 red onion
- 3 tablespoons extra virgin olive oil
- 2 teaspoons Hands on Earth Sea Salt with Lemon
- Fresh thyme to taste
Preparation
- Preheat the oven to 200 °C. Cut the vegetables into similar pieces and place them on a baking tray.
- Drizzle with olive oil, add Hands on Earth Sea Salt with Lemon and thyme, mixing all the ingredients well.
- Roast for about 30 to 35 minutes, stirring halfway through cooking, until the vegetables are golden brown and tender.
Serving suggestion
Serve as a side dish for grilled fish, poultry or meat, or as a main course with feta cheese or quinoa. The citrus touch of lemon enhances the natural sweetness of the vegetables and provides a fresh and balanced flavour.
